I see the tv ad campaign slowly ramping up.

Is it true that the WiiU cannot use more than one of those touchpad controllers at the same time?  Because I'm seeing info to tbe contrary.

Good question.

I've always seen it advertised with several Wii Motes but only one touchpad Controller.

It can only support one touchpad controller for now. Nintendo has said they will eventually add support to allow for two at a time (which halves the framerate) and then developers can start making games using both touchpads.

It will actually drop below 15 fps with 2 control pads, until the firmware is updated. I will pick up a Wii U the second I hear the words "Mario Kart Wii U":)
